Since I ran the annual Chili 5k and they had a chili cook-off afterward, I decided I wanted to make chili too. This recipe was a blend of the MacArthur Recipe that we received in a recipe book for our wedding and the Chapman's chili recipe. What happened was the commissary had run out of some of the things I needed so I just blended both to complete one. It took a lot of time to make, so be sure that you have some time to spend making it..............
Ingredients:
Italian Sausage
Ground Beef
Bacon
1 Green Pepper
1 Jalapeno
Onion (I used about a quarter of an onion)
2 cloves of Garlic minced
1 can of Green Chilies
1 c of Red Wine
6 c of Tomatoes
1/2 c of Worcestershire Sauce
3 cans of Bush's Chili Beans
1 can of Black Beans
1 bottle of Pace Salsa ( I used Hot)
1 can of Pinto Beans
1 can of Kidney Beans
1 can of Garbanzo Beans
1 t dry mustard
1 1/2 t chili powder
Salt and Pepper to taste
I laughed because I didn't know what a dutch oven is, besides the one my husband subjects me too :). I assumed it was a crock pot, but my Mommy told me its a large pot.........
In a dutch oven, brown individually and drain in order: bacon, sausage, ground beef, cook onions pepper and garlic in the same dutch oven, when tender add the chilies, wine, Worcestershire sauce, and tomatoes. Simmer 15 minutes. Add salsa, beans (with liquid) and meat and spices. Stir, cover and cook for a further 25-30 minutes.
It turned out really really good, but spicy so if you don't like spicy don't add the hot stuff......we usually add chili cheese fritos, sour cream, and cheese to our chili ( I know super unhealthy-but it feels good to be bad) and I topped it off with some cornbread. **

ReplyDeleteIt sounded like blah blah blah another chili recipe with a million ingredients and then i scrolled down to the pic with the sour cream and cheese on top pic.....and then the comment about adding chili cheese fritos....holy shit I'm jealous.
